1ST COURSE

Oysters, Champagne granita, grapefruit pearls 

Mixology: Rob Dolan Blanc de Blanc 


2ND COURSE

Pork terrine, apple crisps, mustard foam, beetroot relish, pickle shallots 

Mixology: Midori & Apple Sour 


3RD COURSE

Kingfish tataki, ponzu, lotus root crisps, avocado mousse 

Mixology: Chilled Sake 


4TH COURSE

Lamb backstrap, miso eggplant, yuzu yoghurt, charred onion, red wine jus, dukka 

Mixology: Prohibition Bee’s Knee’s cocktail 


5TH COURSE

Dry aged porterhouse, crispy potato rosti, watercress, truffle jus 

Mixology: 2017 Heathcote II Shiraz 


DESSERT

Basil pannacotta, white chocolate whip, strawberry gel, strawberry 

balsamic ice cream 

Mixology: Coconut Margarita
